Thermistors have different response curves based on their chemical makeup. 10K refers to the resistance at 25 degrees C. I can't find SDT 1000 anywhere except in reference to Roland equipment. Maybe it's a Roland number?
If you use a random 10K thermistor it will probably be okay. Beyond the chance that you'll get the right curve, the curves are similar enough that if it's not in a critical part of the circuit it'll be fine.
