I would go for Channel aftertouch, because it's a *lot* more common 
than poly aftertouch. The prophet T8 (IIRC) and several Ensoniq synths 
(SQ80 etc) use poly aftertouch, but despite being very expressive, you 
don't see it that around often compared to common Channel aftertouch.

The most common IMO are CC1 (Mod wheel) CC4 (foot pedal control) and 
CC7 (Volume). This is simply because they are often found on 
synths/keyboards and controllers.
MW is very common, and if you have a user choice to select between the 
other 2 for the second CC, that would be a useful feature.
