Pretty easy in most cases depending on how much time you spend on it.

You can ladder a bunch of resistors up the back and get a single CV out if
its a two-contact keyboard ( 1 contact for gate, other for CV ).

If its single contact you can do one of many keyboard scanner designs on the
net.
