It would be good, if it were possible, to let them get a taste of 
stripboard/prototyping board and 'real' PCBs.

Both are likely to be encountered out in the wild.  Those starting as 
hobbyists are most likely to be using some form of prototyping board 
unless they are really adventurous and want to get straight into PCB 
making.  Real PCBs, of course, are more likely to be encountered in a 
work environment.

I've seen batches of populated PCBs being sold very cheaply on eBay and 
through other surplus outputs.  If you could lay your hands on a load of 
these, they could make excellent [de]soldering practice and also be 
studied to give an insight into the layout design and manufacturing 
processes.

Odds are, you will have limited time with the students.  If you can 
provide cheap bits for extra-mural studies, so much the better.
