Hi Steve,
One thought would be to do this "poor man's SMD" style, i.e. don't
reverse the tracks, put them on the top of the board and solder normal
components directly to the tracks. Not quite a sturdy as through-hole
perhaps, but quick and dirty. Would also allow them to design their own
boards with (possibly even hand-drawn) artwork for instant etching, etc etc.
Another idea is perfboard with Ciat-Lonbarde style "paper circuits"...
which are basically a paper template laid over the perfboard which shows
how to place components and make connections:

Very sculptural-looking when the perfboard is omitted, see photos lower
