I would recommend going through the digital portions of Horowitz & Hill.  They'll cover those components, and show you how they get used in the usual context.

You are probably going to find that it takes a lot of discrete logic and painful troubleshooting to build the required busses and state machines.  A cheap and simple microprocessor will give you them for free.
