There really is a lot of detail in the datasheets and the application notes.
You may not need anything else.
For the converters Analog Devices has the Analog Conversion Notes.
Checkout the Linear Tech and Maxim sites as well.

P.S. One of my favorite free books (besides the National Audio
Radio Handbook and the Precision Monolithics Audio Handbook and
the RCA Amplifier Handbook) is the Analog Devices Non-Linear
Circuits Handbook.
