With more DACs, you can get more (channels x samples per second).
Just one DAC ensures that any two channels are matched. There will
be conversion errors, but the channels will be interchangeable. In
some cases, I suppose that might be desirable.

For example, if you were designing an 8-voice polyphonic
MIDI-to-CV and the refresh rate was so high that you had to use
two DACs, would you use one DAC for CV outputs 1-8 and one for
velocity outputs 1-8 or one for CV & velocity outputs 1-4 and one
for CV & velocity outputs 5-8 ?

A separate EEPROM chip would make maintenance easier when the
EEPROM reaches EOL. Not that this is likely to ever happen, of
course.
