Sounds like you could create a shield with I2C/SPI DAC, and set it up  
so the shields could be daisy chained.  The more shields you stack,  
the more DACs are added to the bus.  Maybe write an Arduino library  
with some utility functions, or even a shield with a dedicated DSP  
chip that the Arduino can send orders to over this bus.  Am I getting  
warmer?:)
