Because it's a lot easier to measure distortion (THD and FFT analysis), 
freq response and temperature sensitivity in simulation :).
Not quite what he meant, but a valid point I think.

You can also rather more easily find the causes of strange behaviour and 
how to fix it. Some time ago I designed a simple two transistor gain stage 
which had a nasty glitch whenever it was overdriven. The cause was 
saturation of the second transistor and was fixed by adding a schottky 
diode. Finding the cause was easy to find when you could simultaneously 
plot voltage and current at several points in the circuit.
