IMHO, the Photon pickup was designed as a work-around to the
Roland Hex Humbucking pickup patent. It should reject magnetic
fields, but light pollution could be an issue.

I think that the 360 Systems and ARP (Avatar) could have worked
with hex humbucking pickups.

The idea of using a FFT to pick the individual notes out of
a composite (normal guitar pickup) signal is unworkable imho.
You could not distinguish individual fundamentals from harmonics.
String stiffness also makes harmonics sharper... it would be VERY
complex.

The hex pickup is essential, imho.
