There's nothing stopping you, other than the giant pile or work  
involved. It would likely be a mostly software exercise. Analyzing an  
audio signal to extract pitch, amplitude and trigger is a really hard  
problem.

I think you would be better served by grabbing a used Yamaha G-50, or  
an Axon system.
