There are commercial devices to do this on the market already, so it is
possible with current tech.

There is no reason you cannot DIY, it will take considerable effort.

As I see it you want to turn several characteristics into MIDI data:

Envelope :
Easy there are several analog modules that do this already.

Attack Velocity:
Think Velocity sensitive keys again there are several analog modules that do
this already.

Frequency:
This is the trickier one as the "easy way" to extract this data is a FFT
allowing for Multiple frequencies ( multiple strings) to be active at the
same time. Of course you can only transmit Midi Notes without using Pitch
Bend, so I would add that in as well.

There may be a few other bits of info that would be good to send but I think
this may cover the basics.
