Yes, op-amps mostly follow a standard pinout. There are exceptions of  
course - life wouldn't be any fun if there weren't, would it?!
But in the majority of cases you can just swap them in and out

I used to do exactly what you're suggesting with opamp-based fuzz/ 
distortion guitar pedals. I swapped op-amps looking for a good  
combination of sound and low power consumption. I've heard of people  
doing the same thing with their expensive tubescreamer clones looking  
for the perfect opamp.
