All you need to do is add a resistor from your 5V to the collector of the
transistor in the circuit you referenced (below) and you will get the
5V to 0V that you need.

You may or may not need the resistor. Moog had the pull-up resistor internal
to the synth

S (switch) trigger goes when a switch is closed to ground.

I'd suggest a 1K resistor if you need it.
