Yes it will work. I assume that you want a 0-5V output. while you can
use a fixed resistor and a pot, the voltage will slowly go down as the battery
dies. I'd use a 1K resistor from the positive terminal in series with
a 5.1V zener diode to the negative terminal. Put a 10K pot end terminals
across the zener, and take your output from the wiper (and negative battery
terminal). This should last a long time and be very stable.
