Since someone must already be thinking "ok, we have separate string
signals, so let's track the pitch":

Just a thought, but what about tracking the pitch of the signal from
the pickup, and not only feeding that signal to the inducer, but also
feeding back a sample, pitch-shifted to the right note height? Then,
your guitar might or might not sound like a piano/bagpipes/pan flute.

That could be fucking amazing.
