[sdiy] My plan for a modular - comments please?

I've been kicking the can around with a modular for about two years
now and it's about time to pull the trigger I think
Here are some decisions I've made and I would love for comments on any
of this. I realize most options are religious battles so feel free to
privately mail me if you do not want to ignite a holy war. My goals
are budget, reasonable durability (I gig, but I'm not taking this
stuff on the road for months..), and to use DIY type modules opposed
to more "commercial" ones.
Rack format - Blacet's 19" Sub Rack Mounting System (Frac Rak Compatible)
Power Supply - Blacet's PS500 Power Supply (+-15V)
Will the power connectors coming from this PSU be "universal" with
most module designs? With the +-15V am I going to be able to regulate
to +-10 or +5 or so, or will this filthy up my power? If there's a
smarter choice I can make now I'd rather do so, instead of really
having to hack later on to do what's best. Also, am I going to be
able to physically patch this power to additional 19" sub racks, or do
all need their own without getting ugly?
I'm planning on going 1/8" which seems the most general route.
Overall for CV (specifically for pitch but also for filters and vcas),
I'm under the impression that I'm going to be seeing mainly 0->5V. Is
this wrong? I've seen some talk about 0->10V, -10V->10V, etc.. are
these the exceptions, or are they the standard? This is a very
important detail and I don't think I'm clear enough on it to move
forward yet. While we're on that subject, what kind of voltages are
common to come out of VCO's? (+-10V?). And is gate always 5V?
And, finally (for now), roughly what does it cost to have a one off
metal panel made up and shipped? (I'm in USA)
Thanks for any responses. Believe it or not I really have researched
quite a bit.. there are just so many options that it can be incredibly
difficult to make sure you are going down a sensible path.
