Of course a varying phase shift would be noticeable as this would be a 
phase modulation (or frequency modulation, both are connected to each 
other anyways with one being the integral of the other).

A constant phase shift (due to it changing the waveform and peak value) 
would -- when used as some sort of CV -- make a difference as well as 
you already pointed out by the LFO reference.

I was just wondering whether we could hear the phase shift directly, as 
the human auditive system uses phase shifts (or time shifts?) between 
both ears to get the direction. But i have no idea if other effects 
would be on the way.

'Course, some "golden ears" claim to hear a difference between the way 
the copper wires are stranded... #-)
