Ian,

 What do you want to do?
If it's synthesis, then lots of VCOs, filters, EGs, etc
If it's audio processing then you'll need LFOs, VCAs, Filters, enveloper
followers and so on.
If it's wierd noises, then you'll want FM oscillators, ring modulators and
such.

 It really does depend on what you're aim for the modular is.
