Jim,

I would recommend Hal Chamberlin's famed book, "Musical 
Applications of Microprocessors".  It's literally an 802 page
bible on analog, digital and analog/digital hybrid synthesizer
design.

It's long out-of-print but I have mint, un-read, new-old-stock
2nd edition copies available for $50USD + shipping.  Your best
alternative unless you own a time machine.  MANY people on this 
list have purchased this book from me with much praise.
