"velocity" sensing is pretty crude, usually.
You just have two contacts per key, and see how long it takes before the
second one closes.

If anyone wants to get into sensing velocity or after pressure of individual
keys, I would recommend looking at optic fiber methods. There are many very
ingenious sensor strategies based on these.
