I think the main advantage (based on what I've seen of it) would be that
you can use at least both of your hands and possibly all of your fingers
to move things around at the same time.
I hate working with software synths because it feels like I'm operating
them with only one finger. Having a MIDI control surface with a bunch of
knobs and sliders would be better, but it wouldn't have the visual
indication of their functions like on a hardware synth or a ReacTable.
I also find that the more different ways I have of doing something, the
more likely I am to not only do it, but to have fun doing it.
