I was thinking of doing this with analog slotted optos
(or discrete transmitters and receivers).

I would create a piece of plastic that ranges from transparent to
opague along its length. The plastic would be attached to the
key and pass through the slotted opto. The amount of light
transmitted would change based on key position.
