Given two VCOs, my fave is cross coupled FM:

Connect Osc A Sine out to Osc B Linear FM input and
connect Osc B Sine out to Osc A Linear FM input.

Set one osc to a constant frequency and slowly sweep the frequency of 
the other - listen to one or both outputs - yummy!
