Looking at the data sheet it appears that this part has about 0.3dB 
(3.5%) gain error on both the ADC and DAC. That means it's accuracy at 
DC is going to be bad enough you wouldn't want to use it for pitch 
control CV applications unless you like playing off key.

If you look at the block diagram you can tell that this part is heavily 
slanted towards processing audio. Stick within that domain and it should 
perform nicely. Note however that the maximum conversion rate is 
22.05kHz, so your audio bandwidth will be somewhat limited.
