Hi Nick,
From my years working on electronics, knobs are usually one of 3 types,
If they are fixed with a screw(s) that should be visible to you, If
they are
"collet" knobs, the most expensive of the 3 you will usually find
that there
is a removable cap on the knob. If you remove the cap there will be a
screw or nut to undo to release the knob from the pot shaft. However I
would guess they are "push on" types that have a metal spring clip
inside
to lock onto the flat part of the shaft. You may have to pull a bit
harder. I
know the feeling, you are worried about damaging something. In my
experience you will probably find if you pull just a little harder
they will
come off.
