While not strictly DIY, the paia kits are a fairly inexpensive way to
jumpstart a modular. If you want to do your own front panel and have
jacks available then you can build two VCOs and a simple ramp
generator for less than $100. You can add their panel plus jacks for
about $30.
IMNSHO, the hardest part about DIY is not the mechanics, rather, it's
going from schematic to finished board so having a PC board takes
away most of the need for "simple." Having a kit of parts makes it
that much better.
If you have any CEM 3340s lying about you can whip up a breadboard VCO
easily in an afternoon.
I find that I'm generally disappointed with discrete designs that are
too simple.
