Ahh, McMaster-Carr, DIY dream warehouse.. (and the best online store I have
EVER seen..

So the MU metal should just be fashioned into a cage around the transformer
and grounded to case?

Not so hard to find, just search for it at http://www.mcmaster.com/. 
But, wow, it sure is expensive! A 15" by 12" piece costs from $35 to $102,
depending on thickness. I don't even know what it is, I've only heard that
it's for shielding. Time to check the Wikipedia...
