Looking at my venerable Tek485 the funky pots tend to be a mechanical construction spread across several circuit boards, with gears driven by the different shafts.  Same for the timebase control.  So not something that you're likely to find in a catalogue.  Time to get out the Meccano/Lego?

I guess in an EUB you have enough room for such a mechanical construction.
