If it has a true 'center tap' (three terminals, not four) you can't
get the phase right...

You can just make it into a single +12V 1A power supply if you want.
Just full wave rectifier with 2 diodes. The centre tap is your 0V.
You'll need a largish heatsink because your regulator will be
dissipating Voltage Drop * Current watts of heat.
