A fork with two tines (a U). I believe you just refer to it as a slot.

Some opto's are on/off others are analog. To get the pressure you need
an analog slot interrupter and a method to vary the amount of light that
goes thru the slot as you change the pressure. The mechanism could get
quite complicated if you need a lot of switches.
My foot pedals are only on/off and the board is very simple.
