You could easily wire up a rotary 4 pole 3 position to do this.

Another possibility is to put three on/off/on switched right next to each
other
and either put a common handle across the three (could be made to look
impressive!) or just flip 1-2-3.
Who knows, maybe the odd otehr mixes could be musically interesting as well!
