Check about MADI on the net, its another professionnal standard for
multichannel audio and is may be more interesting than ADAT given the specs
of your interface.
On the other hand, here are some pages about a DIY ADAT interface:

There are some chips that do the ADAT dispatch towards the ADC/DAC, may be
simpler than the FPGA route. (but less fun ? ;)
