[sdiy] 8031's & serial EEPROM's? for MIDI...

I have some 8031's that I want to use for some MIDI interface circuits. But 
I don't have any (empty) 27XXX EPROMs, but I DO have a lot of 8-pin (and 
more) serial EEPROM's that I thought I should be able to use with a shift 
register or something.

Is there a common pain-free (more or less) way of doing this? It's not just 
not wanting to buy new EPROM's (which is of course nonetheless a reason), 
but I also think the EEPROM's are a lot easier to program.
