For setting 1V/octave trimmers I use a Korg DT-1 chromatic tuner and my 
own ears.

The DT-1 is getting pretty long in the tooth now. But there are more 
modern alternatives from Korg.

Chromatic tuners are better than standard guitar tuners [that only do 
the six notes] since you can set the interval without having to reset 
the absolute pitch to a specific note.

But I shouldn't forget the ears bit, they're important too. :-)
