The goal is to control high res csound synthesis with the cv outs from
the EWI 3020, so I believe ultimately there will be a bunch, but to get
it going at a minimum it will be bite, breath, key, and octave roller. I
haven't received the thing in the mail yet, so I don't yet know the
specs on its cv outs!

Can you point me at any resources on the above or give me any more
details of how it is done?

Well, I'm a Csounder, but I am interested in making hybrid Csound CV
analogue synth patches. So eventually I'd like to get high res cv back
out from the computer too. =)
