take the brass insert out of a knob and glue that into
your homemade pitch wheel. I drilled a hole the long
way to reach the setscrew. It might be possible to modify
a collet nut type knob... I have not tried it.
There are some commercially available VERY large knobs...
maybe three inch diameter. They would be much thicker than
the typical pitch wheel, but could work for a custom job.
I used the pinch roller from a cassette transport to make the
center 'detent' if you want one. Probably a piece of nylon
(like in the ProOne) would be easier

Grab a piece of plexiglass, about 20cmx20cm, make a hole in the middle, put a bolt in that middle, attach it to the drill and start spinning slowly, and with a sand paper start "sanding" the spinning plexiglax... it will turn out to become round (cut the most possible so it would be easy to sand it).
Use the center hole to attatch the pot and make a small mark that indicates the middle of the wheel. if you would like to make it "cooler" put a bright led inside the plexiglass (the plexiglass must be 4mm min.)

The main problem I can see is the self-centering
mechanism of the Pitch bending device.
I am used to using Roland types which have the single
grey control which is flipped left and right for pitch
bend, and pushed forward (force sensor) for
modulation.
Failing this, perhaps someone had an appropriate
assembly for sale from a scrapped keyboard?
