The standard tome is "Delta-Sigma Data Converters", edited by Norsworthy
Schreier and Temes. See if you can find it in a library, because the
regular price can make you cry - or try to buy it at an IEEE
conference, then you get a good discount.

This depends on how much effort you spend on noise shaping on the
digital side and how much aliasing you expect to be present.
