I think Mark Smith would use Danish Oil on his oak wooden cases he used
to do for me. Mark may be able to chip in here if he listening to all this.
I would use a wax since I find most oils to be too smelly for a small
job like end cheeks. Colron do a nice range of coloured and plain
'beeswax' finishes. Its easy to put on and is low in VOC.
Wax is never going to be as hard wearing as varnish, but I think it does
age better and responds to use much better.
Lacquer, as someone suggested, is great for guitars and pianos but I'm
not sure I would like it on the panelwork for a synth. My guitar looks
great with a nice and shiny finish... but keyboards should be more
refined. Just like keyboardists are more refined than guitarists. :-)
But varnish can look great if you know what you are doing. I just find
that most ordinary folk, including me, can't get varnish to look as good
as commercially applied varnish coatings. Wax and oil are just more
forgiving.

Does look very nice though.
