Here's a good online MIDI spec ..

Channel pressure and Pitch Bend are indeed sent as their own type of
MIDI message.
The reason these are not simply normal MIDI controllers is twofold:
(1) In the case of Pitch Bend only, the data is 14bits wide (to help
prevent 'staircasing' as you put it, although the actual used resolution
depends on the devices sending and receiving the data)
(2) To save transmission bytes to help avoid clogging the MIDI bus with
these typically high data rate controllers.
