If you were to use a generator running off the van's engine, then there are
a few things to consider. Generators typically like to spin fairly
fast... 3000-4000 rpm. You obviously wouldn't want the van idling at 4000
RPM, so you'll need to be careful about pulley diameters to get the proper
speed at the generator. You could also look for a generator designed to
run on a tractor PTO. These have a gear drive that needs about 500-1000
RPM at the input.
In either case, I believe you'd want the generator turned off while driving
the van. This means you'd need something like an air conditioner clutch to
stop the generator from spinning when it's not being used. Or you could
get a transfer case from a junk yard and have a real PTO system installed
(which requires changing the transmission tail piece and shortening the
driveshaft). The PTO option is probably the "best" method, but requires a
lot more effort.
