A valid point. But, you know, I can't think of any time where I have 
needed not to use one half or a quarter of such an op-amp.

The only two unstable op-amps I tend to use are the 5534 and OP37, and 
they're both singles.

But I guess I would make a non inverting amp of ten or so, and then bolt 
its input to ground. Again, the key is to make sure that the output is 
not flapping about.

Tying both the inputs together is not a good idea since you are relying 
on the offset voltage from forcing the output to one of the rails. Its 
an indeterminate state and I don't really like that. I guess it could be 
possible that if the offset is sufficiently small, the output could whiz 
about with any differential input noise.
