[sdiy] serial EEPROM?

hello all,
i've got a Z80-based scale quantizer project in the planning stages... but
i'm having a spot of bother choosing a suitable ROM chip. all the other core
devices (Z80, SRAM, ADC, DAC) have a parallel interface which makes things
nice and easy. from looking at online catalogues it seems that all the
EEPROM parts of the right size are serial. hence two queries:
1. how can i find out how to make the Z80 and EEPROM talk to each other?
2. presumably i don't want to run the main program loop from the EEPROM as
this would slow everything down quite badly - so some kind of boot loader to
get the time-critical code into my SRAM? anything important or non-intuitive
i should know about this?
