That is a 2.5 volt reference.  In the reference circuit...I use a gain of 4 
from the reference to the reference outputs (the emmitters of Q1 and Q4), 
which will give you the +/- 10 volts.  However...I no longer use the LM336, 
I prefer to use the LM4041-ADJ.  You can put this part in pin for pin, but 
you need to change D17 and D18 from 1n914 to 100K resistors.
