Put a 1A fuse on the transformer output.  Use a heatsink for your 
regulators if you are to deliver 600mA.  The regulators are internally 
protected against thermal overload/shortcircuit, so you probably won't 
ever blow the 1A fuse by overloading your PSU - it's more a safety 
feature in case something in the PSU circuit itself goes wrong / is 
wired wrong - then you won't melt the transformer.
