If you want a hardware design, and you're OK with 4-voice poly (with
velocity for each note, and several additional CV outs), Elby designs
<http://www.elby-designs.com/> is gearing up to sell the Poly DAC.
You could build your own polysynth, hard-wired or modular, using this as the
MIDI engine. The rest of the specs are up to you then, mix 'n' match modules
to your heart's content.... Last time I looked there were no prices, but
Laurie's a very helpful guy - and in my experience, definitely recommended
for the good trader list.
If you don't mind forking out a bit more money, and doing a load more work,
the uCapps MIDIBOX CV <http://www.ucapps.de/mbhp_aout.html> is capable of
8-voice poly, but no key velocity available with 8 voice.
Real-time Midi control of many parameters, and even memory storage (using
the bank stick) appears possible. At the moment, if I read it right, the
MIDIBOX supports up to 64 simultaneous CV outputs, with 64 additional logic
switches, if a Midibox64, midibox AOUT and SHX8 board are used. Drawback is
the 2 x MAX525 chips in the AOUT board - around £25 each in the UK -
(OUCH!)
It's got a very active forum, so prob. worth a look.
