Here's an idea to make things cheaper and easier: pick up a cheap
compressor which people have successfully modified to greatly improve
its quality, namely an Alexus 3630 and mod away in whatever way you
want, and in ways which no one else has done before, then put it
inside of your analog synth.

Do you mean those old round ones? No idea where to find VU meters
like that, other than in old equipment or some radio stations,
etc. (no, I don't advise visiting a radio station with a screwdriver
and wire-cutters for use when no one's looking... unless they have
some old equipment sitting around unused and headed for a scrap
dealer, of course). Maybe some old surplus voltmeters, etc. will work
if you replace the meter's background and add some additional
circuitry, but I've no idea if those would be responsive enough for
what you want... and creating a background for the meter, calibrated
for VU readings, will take some work.
Good luck and have fun!
