With all due respect, I believe strings (like cello) have a release  
phase after the bowed sustain.
(just my humble opinion)

I think it might go something like (in modern speak):

Attack: chaotic reaction to step function energy input
Decay: resolving to which chaotic attractor will be steady state  
(strings can have bowed harmonics)
Sustain: Steady state portion of step energy input at attractor  
frequency
Release: stored energy leaves system (or natural reverb decays, as in  
flute in concert hall)

 From an acoustics sense, the reverb is part of the tone?
