My, soon to be released, Hobbit should also make a great starters synth and, unlike the FatMan, uses fairly standard building blocks allowing it to be readily interfaced to other conventional sound modules. The Hobbit is a single board synth and is a rebuild of the SimpleSizer which (if only Tom G would confirm/deny) is a copy of the MINI-4-CV.

The catch is you'll need to program the PIC chip, and the code isnt exactly
available.  An old version Trevor Page wrote can still be found online and
should work, I'd have to hunt down the URL for it.  The TomCat is very
simple.  Since its a board only project it shouldnt even be very expensive
for you to purchase from Argentina since it was ship in a large envelope and
not a box so it probably wouldnt even get noticed by customs, however TomG
is currently on hiatus.

I really really think if some good documentation was written up for the
Tomcat ( PAIA-style documentation ) and a kit put toegether, it would be an
awesome beginners synth.
